Are you for or against his way of serving?

 
He is Toshiro Sano,a famous barista in Kumamoto city.
 
After the Blue Bottle Coffee made the “third wave” coffee trends, hand-dripping has become very popular in Japan and more people are doing it.


There are many movies which show the ways of hand-dripping.You may notice that the process of it is similar;
 
・Put a paperfilter in a dripper and set it on a pot
・Grind the beans
・Put it in the paperfilter
・Pour some hot water in the grinded beans and leave it for about 30 seconds(this is pre-soaking or murashi)
・Then start hand-dripping

 
 
But the some people say “No” to the way of Mr.Sano.
 
His way could be controversial because he does not soak the bean at all.In Japan,soaking the bean is one of the must procedures in seving coffee.Watch some You Tube videoes on hand-dripping coffee.(I guess)More than 90% of them contain the soaking process as above.
 
People usually do it as if the process is deffinately needed.Mr.Sano thinks otherwise.
 
Some people say “His way is not right” or “It must taste horrible.” They maybe true.It depends on the definitions of “right”and “taste good”.
 
Mr.Sano thinks,”Everyone has their own taste.Taste deffers for everyone.” A cup of coffee someone tastes good does not mean it is good for someone else too.
 
He does not deny pre-soaking.It makes coffee stronger.So if you prefer strong coffee,do pre-soaking.
 
He thinks his dripping is the best way to serve coffee,even without pre-soaking.
 
I tasted the coffee he served many times,and it tastes good.
