Kaijiru is an asari clams miso-soup, which is popular in Japanese cities along coast lines.

Difference between miso soup? Not big.

Kaijiru is not good with cheap raddish

Because if you put many clams into miso soup, it became kaijiru. ( check the image below ) But the umami taste of clams is huge! Clams make good broth, so it is clearly distinguished from normal miso soup.

kaijiru

I tried to make Kaijiru for dinner and found a cheap Japanese raddish at a vegetable store. It cost only 35yen(about 1/3 dollar). For me, raddish is one of the best miso-soup-gradients.

So I bought one. I put some slices of the raddish into the kaijiru. The seasoning of the soup was good and I enjoyed the umami of clams.

But not the raddish!

It became oddly soft…I cannot discribe the oddeness very properly.I guess it was because the raddish was not very good.(That was why it was cheap)

Sashimi is not sushi.
